Blueberry Jam

Many would know that sugar is an essential ingredient in most traditional jams. This jam has no added sugar and simply delicious!

(serves 12)

300g frozen or fresh blueberries
1 tbs honey
juice from 1/2 lemon
1 tsp vanilla extract
1.5 tbs chia seeds

Combine blueberries, honey, lemon juice and vanilla and simmer over a low heat for 5 minutes or until mixture looks syrupy. Add the chia seeds and mix through. Remove from heat and allow to sit for 5 min before placing into the fridge. Rest for 1 hour until the jam forms a gel-like consistency. Spoon into a glass jar. Enjoy!
