Last weekend we were invited for breakfast to our friends’ place. They spoilt us lots with their hospitality and delicious food. Bircher muesli was one of meals we had which was an absolute treat! I loved it so much so that I asked for the recipe. I couldn’t wait and the same day we bought all necessary ingredients for me to recreate it. The recipe is from the book called ‘The Cook’s Companion’ by Stephanie Alexander. It’s very quick and easy to make and can be a perfect alternative to my daily breakfast.
Ingredients (serves 4):
2/3 cup rolled oats
juice of 1 lemon
2 tablespoons honey or to taste
2 apples, unpeeled and coarsely grated
75g roughly chopped almonds
1 passion fruit
2 tablespoons yoghurt or cream
Mix all ingredients except passion fruit and yoghurt and leave to stand for at least 1 hour (even overnight). Just before serving, top up with passion fruit and yoghurt.
Here is an interesting fact from the same book: ‘This recipe is a bit more frivolous than the original, which was developed by Dr Bircher-Benner in his Zurich clinic in the late 1890s as part of his dedication to convincing patients of the benefits of eating raw fruit and vegetables‘.
